Delicate, paper-thin French crepes draped in a glossy orange butter sauce. This beloved French classic is easier than you think and makes any morning feel like a cafe in Paris.
Ingredients
- 2 cups all-purpose flour
- 3 large eggs
- 1.5 cups whole milk
- 0.5 cup water
- 3 tbsp melted butter
- 1 tsp vanilla extract
- Pinch of salt
- Zest of 1 orange
- 2 tbsp grand marnier (optional)
- Powdered sugar for serving
Method
- Whisk flour and salt in a bowl. Make a well and add eggs, then whisk until smooth.
- Gradually add milk and water, whisking constantly to avoid lumps. Stir in melted butter and vanilla. Rest batter 30 minutes.
- Heat a non-stick pan over medium. Brush lightly with butter. Pour 3 tbsp batter, swirl to cover pan. Cook 1 minute until edges lift.
- Flip and cook 30 seconds more. Stack on a warm plate. Repeat with remaining batter.
- For the orange butter, melt 4 tbsp butter with orange zest, juice of 1 orange, and 1 tbsp sugar until simmering.
- Fold crepes into quarters, arrange on plates, drizzle with orange butter, dust with powdered sugar.
