Ingredients

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1.5 cups whole milk
  • 0.5 cup water
  • 3 tbsp melted butter
  • 1 tsp vanilla extract
  • Pinch of salt
  • Zest of 1 orange
  • 2 tbsp grand marnier (optional)
  • Powdered sugar for serving

Method

  1. Whisk flour and salt in a bowl. Make a well and add eggs, then whisk until smooth.
  2. Gradually add milk and water, whisking constantly to avoid lumps. Stir in melted butter and vanilla. Rest batter 30 minutes.
  3. Heat a non-stick pan over medium. Brush lightly with butter. Pour 3 tbsp batter, swirl to cover pan. Cook 1 minute until edges lift.
  4. Flip and cook 30 seconds more. Stack on a warm plate. Repeat with remaining batter.
  5. For the orange butter, melt 4 tbsp butter with orange zest, juice of 1 orange, and 1 tbsp sugar until simmering.
  6. Fold crepes into quarters, arrange on plates, drizzle with orange butter, dust with powdered sugar.
