Flanken-cut short ribs marinated in a soy, sesame, pear, and garlic marinade then grilled over charcoal until caramelized and lacquered.
Ingredients
- 1.5kg flanken-cut beef short ribs
- Marinade: 0.5 cup soy sauce, 0.25 cup sugar, 1 Asian pear (grated), 4 garlic cloves, 2 tbsp sesame oil, 1 tbsp fresh ginger, 2 tbsp rice wine, 2 tbsp sesame seeds, 2 spring onions
Method
- Soak ribs in cold water 30 minutes to draw out blood. Pat dry.
- Blend marinade ingredients until smooth. Marinate ribs at least 2 hours, preferably overnight.
- Grill over high heat 3-4 minutes per side until caramelized.
- Scatter sesame seeds and sliced spring onions. Serve with steamed rice and kimchi.
