Ingredients

  • Crust: 200g graham crackers, 100g melted butter, 2 tbsp sugar
  • Filling: 1kg cream cheese, 300g sugar, 5 eggs, 300ml sour cream, 2 tbsp flour, 2 tsp vanilla

Method

  1. Crush crackers and mix with butter and sugar. Press into 23cm springform pan. Bake at 350F for 10 minutes.
  2. Beat cream cheese until smooth. Add sugar, eggs one at a time, sour cream, flour and vanilla. Do not overbeat.
  3. Pour into crust. Bake in a water bath at 325F for 1.5 hours until edges are set but center wobbles slightly.
  4. Cool in oven with door ajar 1 hour. Refrigerate at least 4 hours.
