Dense, creamy and utterly smooth with a buttery graham cracker base. The New York cheesecake is the benchmark against which all other cheesecakes are measured.
Ingredients
- Crust: 200g graham crackers, 100g melted butter, 2 tbsp sugar
- Filling: 1kg cream cheese, 300g sugar, 5 eggs, 300ml sour cream, 2 tbsp flour, 2 tsp vanilla
Method
- Crush crackers and mix with butter and sugar. Press into 23cm springform pan. Bake at 350F for 10 minutes.
- Beat cream cheese until smooth. Add sugar, eggs one at a time, sour cream, flour and vanilla. Do not overbeat.
- Pour into crust. Bake in a water bath at 325F for 1.5 hours until edges are set but center wobbles slightly.
- Cool in oven with door ajar 1 hour. Refrigerate at least 4 hours.
