Ingredients

  • 2 romaine hearts, torn
  • 2 garlic cloves
  • 4 anchovy fillets
  • 2 egg yolks
  • 2 tbsp Dijon mustard
  • 2 tbsp lemon juice
  • 0.5 cup olive oil
  • 50g Parmesan, grated
  • 2 thick bread slices for croutons
  • Black pepper

Method

  1. Make croutons: tear bread into chunks, toss with olive oil and salt. Bake at 375F for 12 minutes until golden.
  2. Dressing: mash garlic and anchovies into a paste. Whisk in egg yolks, Dijon and lemon juice.
  3. Slowly drizzle in olive oil while whisking. Stir in half the Parmesan. Season well.
  4. Toss romaine with dressing. Scatter croutons and remaining Parmesan.
