Crisp romaine hearts tossed in a house-made anchovy and Parmesan Caesar dressing with golden hand-torn croutons. The enduring classic that never disappoints.
Ingredients
- 2 romaine hearts, torn
- 2 garlic cloves
- 4 anchovy fillets
- 2 egg yolks
- 2 tbsp Dijon mustard
- 2 tbsp lemon juice
- 0.5 cup olive oil
- 50g Parmesan, grated
- 2 thick bread slices for croutons
- Black pepper
Method
- Make croutons: tear bread into chunks, toss with olive oil and salt. Bake at 375F for 12 minutes until golden.
- Dressing: mash garlic and anchovies into a paste. Whisk in egg yolks, Dijon and lemon juice.
- Slowly drizzle in olive oil while whisking. Stir in half the Parmesan. Season well.
- Toss romaine with dressing. Scatter croutons and remaining Parmesan.
