Ingredients
- 4 ripe tomatoes, cut in wedges
- 1 cucumber, sliced thickly
- 1 green bell pepper, sliced
- 1 red onion, thinly sliced
- 150g kalamata olives
- 200g block feta cheese
- 1 tsp dried oregano
- 4 tbsp extra-virgin olive oil
- Red wine vinegar, salt
Method
- Arrange all vegetables on a platter or in a wide bowl.
- Place the block of feta on top. Scatter olives over everything.
- Drizzle generously with olive oil and a splash of red wine vinegar.
- Sprinkle oregano and a touch of sea salt. Serve immediately with crusty bread.
