Ingredients

  • 4 ripe tomatoes, cut in wedges
  • 1 cucumber, sliced thickly
  • 1 green bell pepper, sliced
  • 1 red onion, thinly sliced
  • 150g kalamata olives
  • 200g block feta cheese
  • 1 tsp dried oregano
  • 4 tbsp extra-virgin olive oil
  • Red wine vinegar, salt

Method

  1. Arrange all vegetables on a platter or in a wide bowl.
  2. Place the block of feta on top. Scatter olives over everything.
  3. Drizzle generously with olive oil and a splash of red wine vinegar.
