A simple, radiant summer pasta: blistered cherry tomatoes, fresh mozzarella, fragrant basil, and good olive oil tossed with perfectly cooked spaghetti.

Ingredients

  • 400g spaghetti
  • 500g cherry tomatoes, halved
  • 200g fresh mozzarella, torn
  • 4 garlic cloves, sliced
  • Large handful fresh basil
  • 5 tbsp extra-virgin olive oil
  • Salt, black pepper, chili flakes

Method

  1. Cook spaghetti in salted water until al dente. Reserve pasta water.
  2. While pasta cooks, blister cherry tomatoes in hot olive oil with garlic and chili until they burst.
  3. Drain pasta, add to tomatoes with a splash of pasta water. Toss vigorously.
  4. Off heat, fold in torn mozzarella and basil. Serve immediately.
