A simple, radiant summer pasta: blistered cherry tomatoes, fresh mozzarella, fragrant basil, and good olive oil tossed with perfectly cooked spaghetti.
Ingredients
- 400g spaghetti
- 500g cherry tomatoes, halved
- 200g fresh mozzarella, torn
- 4 garlic cloves, sliced
- Large handful fresh basil
- 5 tbsp extra-virgin olive oil
- Salt, black pepper, chili flakes
Method
- Cook spaghetti in salted water until al dente. Reserve pasta water.
- While pasta cooks, blister cherry tomatoes in hot olive oil with garlic and chili until they burst.
- Drain pasta, add to tomatoes with a splash of pasta water. Toss vigorously.
- Off heat, fold in torn mozzarella and basil. Serve immediately.
