Plump shrimp sauteed in a fragrant white wine, butter, and garlic sauce, tossed with linguine. Classic Italian-American at its most satisfying.

Ingredients

  • 400g linguine
  • 500g large shrimp, peeled and deveined
  • 6 garlic cloves, thinly sliced
  • 0.5 cup dry white wine
  • 4 tbsp unsalted butter
  • 3 tbsp olive oil
  • Zest and juice of 1 lemon
  • 0.25 tsp red chili flakes
  • Fresh flat-leaf parsley, salt, pepper

Method

  1. Cook linguine in salted water until al dente. Reserve pasta water.
  2. Season shrimp. Saute in olive oil over high heat 1 minute per side. Remove.
  3. In the same pan, cook garlic and chili 30 seconds. Add wine, simmer 2 minutes.
  4. Add butter, lemon zest and juice. Add shrimp back. Toss with linguine and a splash of pasta water.
  5. Finish with fresh parsley.
