Plump shrimp sauteed in a fragrant white wine, butter, and garlic sauce, tossed with linguine. Classic Italian-American at its most satisfying.
Ingredients
- 400g linguine
- 500g large shrimp, peeled and deveined
- 6 garlic cloves, thinly sliced
- 0.5 cup dry white wine
- 4 tbsp unsalted butter
- 3 tbsp olive oil
- Zest and juice of 1 lemon
- 0.25 tsp red chili flakes
- Fresh flat-leaf parsley, salt, pepper
Method
- Cook linguine in salted water until al dente. Reserve pasta water.
- Season shrimp. Saute in olive oil over high heat 1 minute per side. Remove.
- In the same pan, cook garlic and chili 30 seconds. Add wine, simmer 2 minutes.
- Add butter, lemon zest and juice. Add shrimp back. Toss with linguine and a splash of pasta water.
- Finish with fresh parsley.
