Tender charred chicken in a lusciously creamy tomato-based curry sauce. The most beloved Indian-British dish in history, made properly at home.
Ingredients
- 1kg boneless chicken thighs
- Marinade: 1 cup yogurt, 2 tbsp each garam masala, cumin, coriander, turmeric, paprika, ginger-garlic paste
- Sauce: 2 onions diced, 1 can tomatoes, 1 cup heavy cream, butter, garam masala, fenugreek leaves
Method
- Marinate chicken in spiced yogurt at least 2 hours.
- Grill or broil chicken at high heat until charred and cooked through.
- Saute onions in butter until golden. Add tomato-based sauce ingredients, simmer 15 minutes.
- Blend sauce smooth. Return to pan, add cream and grilled chicken pieces.
- Simmer 10 minutes. Finish with dried fenugreek leaves. Serve with naan and rice.
