Ingredients

  • 1kg boneless chicken thighs
  • Marinade: 1 cup yogurt, 2 tbsp each garam masala, cumin, coriander, turmeric, paprika, ginger-garlic paste
  • Sauce: 2 onions diced, 1 can tomatoes, 1 cup heavy cream, butter, garam masala, fenugreek leaves

Method

  1. Marinate chicken in spiced yogurt at least 2 hours.
  2. Grill or broil chicken at high heat until charred and cooked through.
  3. Saute onions in butter until golden. Add tomato-based sauce ingredients, simmer 15 minutes.
  4. Blend sauce smooth. Return to pan, add cream and grilled chicken pieces.
  5. Simmer 10 minutes. Finish with dried fenugreek leaves. Serve with naan and rice.
