Marinated chicken skewers grilled until lightly charred, served with an addictive peanut dipping sauce. The street food classic from Southeast Asia.
Ingredients
- 1kg chicken breast, cut in strips
- Marinade: 3 tbsp soy, 2 tbsp fish sauce, 1 tbsp honey, 2 tsp turmeric, 3 garlic cloves, 2 tsp lemongrass paste
- Peanut sauce: 0.75 cup peanut butter, 2 tbsp soy, 1 tbsp hoisin, 1 lime juiced, 1 tsp sriracha, garlic, water
Method
- Thread chicken onto soaked skewers. Marinate at least 30 minutes.
- Grill or broil at high heat 3-4 minutes per side until charred.
- Peanut sauce: whisk all ingredients with enough water for dipping consistency. Warm gently.
- Serve skewers over rice or salad with peanut sauce and cucumber slices.
