Ingredients

  • 4 salmon fillets (180g each)
  • 2 tbsp Dijon mustard
  • Zest of 1 lemon
  • 0.75 cup panko breadcrumbs
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill
  • 1 tbsp olive oil
  • Salt and black pepper
  • Lemon wedges to serve

Method

  1. Preheat oven to 400F. Line a baking sheet.
  2. Season salmon. Spread Dijon mustard over the top of each fillet.
  3. Mix panko, lemon zest, herbs and olive oil. Press firmly onto mustard-coated fish.
  4. Bake 15-18 minutes until crust is golden and fish flakes easily at the thickest part.
  5. Serve with lemon wedges and steamed green vegetables.
