Salmon fillets coated in a golden crust of Dijon mustard, lemon zest, fresh herbs, and panko breadcrumbs. Elegant, healthy, and on the table in 25 minutes.
Ingredients
- 4 salmon fillets (180g each)
- 2 tbsp Dijon mustard
- Zest of 1 lemon
- 0.75 cup panko breadcrumbs
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh dill
- 1 tbsp olive oil
- Salt and black pepper
- Lemon wedges to serve
Method
- Preheat oven to 400F. Line a baking sheet.
- Season salmon. Spread Dijon mustard over the top of each fillet.
- Mix panko, lemon zest, herbs and olive oil. Press firmly onto mustard-coated fish.
- Bake 15-18 minutes until crust is golden and fish flakes easily at the thickest part.
- Serve with lemon wedges and steamed green vegetables.
