Ingredients

  • 2kg fresh mussels, cleaned and debearded
  • 4 shallots, finely sliced
  • 4 garlic cloves, minced
  • 300ml dry white wine
  • 100ml heavy cream
  • 4 tbsp butter
  • Large handful flat-leaf parsley, chopped
  • Crusty bread and frites to serve

Method

  1. Cook shallots in butter until soft. Add garlic and cook 1 minute.
  2. Add wine and bring to a boil. Add mussels, cover and steam 4-5 minutes until all are open.
  3. Discard any that do not open. Stir in cream and most of the parsley.
  4. Ladle into large bowls. Scatter remaining parsley. Serve immediately with bread.
