The definitive French mussel dish: fresh mussels steamed open in a fragrant broth of white wine, shallots, garlic, cream, and fresh parsley. With crusty frites.
Ingredients
- 2kg fresh mussels, cleaned and debearded
- 4 shallots, finely sliced
- 4 garlic cloves, minced
- 300ml dry white wine
- 100ml heavy cream
- 4 tbsp butter
- Large handful flat-leaf parsley, chopped
- Crusty bread and frites to serve
Method
- Cook shallots in butter until soft. Add garlic and cook 1 minute.
- Add wine and bring to a boil. Add mussels, cover and steam 4-5 minutes until all are open.
- Discard any that do not open. Stir in cream and most of the parsley.
- Ladle into large bowls. Scatter remaining parsley. Serve immediately with bread.
