Ingredients

  • Broth: 1.5kg beef bones, 500g oxtail, 1 charred onion, 5cm charred ginger, 3 star anise, 2 cinnamon sticks, cardamom, cloves, fish sauce, sugar
  • Rice noodles (banh pho)
  • 200g beef sirloin, very thinly sliced raw
  • Bean sprouts, Thai basil, lime, hoisin, sriracha

Method

  1. Char onion and ginger directly over flame until blackened. Rinse.
  2. Blanch bones, rinse. Simmer in 3L fresh water with charred aromatics and spices 3 hours. Skim frequently.
  3. Strain broth. Season with fish sauce, sugar and salt.
  4. Cook noodles. Place in bowls. Add raw beef slices. Pour boiling broth over (it cooks the beef). Serve with garnishes.
