Ingredients
- Broth: 1.5kg beef bones, 500g oxtail, 1 charred onion, 5cm charred ginger, 3 star anise, 2 cinnamon sticks, cardamom, cloves, fish sauce, sugar
- Rice noodles (banh pho)
- 200g beef sirloin, very thinly sliced raw
- Bean sprouts, Thai basil, lime, hoisin, sriracha
Method
- Char onion and ginger directly over flame until blackened. Rinse.
- Blanch bones, rinse. Simmer in 3L fresh water with charred aromatics and spices 3 hours. Skim frequently.
- Strain broth. Season with fish sauce, sugar and salt.
- Cook noodles. Place in bowls. Add raw beef slices. Pour boiling broth over (it cooks the beef). Serve with garnishes.
