Thailand's most famous street noodle: rice noodles stir-fried with shrimp and tofu in a tangy tamarind sauce, topped with crushed peanuts and fresh bean sprouts.

Ingredients

  • 300g flat rice noodles (soaked in cold water 30 min)
  • 300g shrimp, peeled
  • 150g firm tofu, cubed
  • 3 eggs
  • Sauce: 3 tbsp tamarind paste, 3 tbsp fish sauce, 2 tbsp sugar
  • 3 garlic cloves, 2 shallots
  • Bean sprouts, Chinese chives, lime, roasted peanuts, chili flakes

Method

  1. Whisk sauce ingredients together.
  2. Stir-fry tofu in a screaming hot wok until golden. Push to side. Add shrimp, cook 1 minute.
  3. Add garlic and shallots. Add drained noodles and sauce. Toss vigorously over high heat.
  4. Push noodles aside, scramble eggs in center. Fold everything together.
  5. Plate and top with bean sprouts, peanuts, chives, lime and chili.
