Thailand's most famous street noodle: rice noodles stir-fried with shrimp and tofu in a tangy tamarind sauce, topped with crushed peanuts and fresh bean sprouts.
Ingredients
- 300g flat rice noodles (soaked in cold water 30 min)
- 300g shrimp, peeled
- 150g firm tofu, cubed
- 3 eggs
- Sauce: 3 tbsp tamarind paste, 3 tbsp fish sauce, 2 tbsp sugar
- 3 garlic cloves, 2 shallots
- Bean sprouts, Chinese chives, lime, roasted peanuts, chili flakes
Method
- Whisk sauce ingredients together.
- Stir-fry tofu in a screaming hot wok until golden. Push to side. Add shrimp, cook 1 minute.
- Add garlic and shallots. Add drained noodles and sauce. Toss vigorously over high heat.
- Push noodles aside, scramble eggs in center. Fold everything together.
- Plate and top with bean sprouts, peanuts, chives, lime and chili.
